Hitachino Nest Japanese Classic Ale by Kiuchi Brewery

11.2 ounce bottle. Poured into Duvel tulip. Appearance: Pours cloudy orange golden with slightly darker colored tiny pieces of sediment that looks like small dashes of cinnamon suspended sparsely throughout the beer. Off white head settles fairly quickly leaving thin film of translucent head with some thicker foam around edge of glass. Zero lacing. Aroma: When smelling up close, aromas of resinous hops, some earthy notes, allspice, ground peppercorns, wood, subtle hints of honey-esque sweetness. Despite these aromas, when first poured bottle into glass got scents of citrus, grapefruit, and honey scents when the glass was relatively far away. Taste: Can definitely taste this has sat on wood. Subtle amount of piney hops, wood, and allspice on front of palate. Mid palate characterized by citrus and a bit of honey. Some relatively low amount of hop bitterness on back of palate balanced by a malty sweet finish. Nice balance between the hops and malt. Palate: Mouth feel is fairly smooth and somewhat velvety initially. Some low to medium amount of bitterness in finish, for the style. Quite mild for an IPA, especially compared to freshly brewed west coast (USA) IPAs. Overall: As could be expected, aging this style of ale on wood (in this case cedar) tones down the hop character, reducing bitter assertiveness. However, this brings to light the complexity from the spice and flavors acquired from aging on cedar, as well as the malts used, thereby producing the end result of a complex and well-balanced beer. In short, a unique, subtly spice tasting, and well-balanced IPA with relatively low bitterness.
